“One night my family was wanting chicken enchiladas. So I looked up a recipe for it and again I didn’t have all the necessary ingredients. So I improvised! My family said it was their favorite enchiladas ever!”

Ingredients

  • 1/2 cup chicken stock or 1 can chicken soup (drain out the noodles)

  • 1 tbsp butter

  • 1/2 tbsp of onion powder

  • 2 cup chopped cooked chicken

  • 1/2 cup chunky salsa

  • 8 flour tortillas

  • 1 cup shredded cheese

Directions

  • Preheat oven to 350 degrees.
  • Heat butter in saucepan.
  • Add onion powder.
  • Mix in soup.
  • Spread 4 tbsp of soup mixture in bottom of baking dish.
  • Spread a spoonful of soup mixture, chicken and salsa in the center of each tortilla.
  • Roll up tortillas and place seam down in baking dish.
  • Spoon remaining soup mixture and salsa on top of tortillas.
  • Sprinkle with cheese.
  • Bake at 350 for 25 minutes.
