“This is my version of the Easy Meatloaf Recipe… it’s very easy and a sneaky way to get some veggies into your meal (or your kids). It doesn’t take long to make, and it’s quite good!”

Ingredients

  • 2 pounds – ground beef1 cup – minced onions

  • 1 cup – saltine cracker crumbs or bread crumbs

  • 1 – egg

  • 1 cup – milk

  • 1/2 cup – french style green beans (cut up)

  • 1/2 cup – finely shredded cheddar cheese

  • salt and pepper to taste

  • 2 tBsp – brown sugar

  • 2 tBsp – mustard

  • 1/3 cup – ketchup

Directions

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the beef, onion, cracker crumbs, egg, milk, green beans, and cheese.
  • Season with salt and pepper to taste.
  • Place in a lightly greased 5×9 inch loaf pan, OR form into a loaf and place in a lightly greased 9×13 inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup.
  • Mix well.
  • Pour over the meatloaf.
  • Bake at 350 degrees F for 1 1/2 hours.
