Ingredients

  • Cake
  • 2 c 2 all purpose flour

  • 2 c 2 sugar

  • 2 tsp 2 baking soda

  • 1 c 1 coconut – sweetened

  • 2 2 eggs – beaten

  • 1 c 1 chopped pecans

  • 20 oz 20 crushed pineapple – do not drain

  • Frosting
  • 1 packet 1 cream cheese – room temperature

  • 1 1 stick butter – room temperature

  • 1 1/2 c 1 1/2 powdered sugar

  • 1 tsp 1 vanilla

Directions

  • Cake
  • Heat oven to 350*
  • Mix all ingredients in a large bowl
  • Pour into large cake/casserole pan
  • Bake for 45 minutes or until knife entered into the center comes out clean
  • Let set for 5-10 minutes while you make the frosting
  • Frosting
  • Mix all frosting ingredients together
  • Pour frosting over cake after it has sit for 5-10 minutes.
