Instant Pot Cowboy Beans & Cornbread

I made the beans in the instant pot and the cornbread in a cast iron skillet!

Ingredients

  • 1 lb pinto beans

  • 1/2 yellow onion, cut into small pieces

  • 1 can rotel tomatoes (original with green chilis)

  • 4-5 strips of bacon, sliced into small pieces

  • 3 cups chicken broth

  • salt & pepper to taste and/or other seasonings

  • For Cornbread
  • 1 box of Jiffy Honey Cornbread

Directions

  • Combine all ingredients into instant pot and mix
  • Set to Pressure Cook for 45 minutes
  • Allow to naturally depressurize
  • Safely remove lid and mix together
  • For Cornbread
  • Mix ingredients as instructed on box
  • Pour into a greased cast iron skillet
  • Cook in oven as directed on box
  • Serve beans and cornbread together as desired

Notes

  • I use many different kinds of seasonings in my beans, you can use any combination you enjoy.
